Pan fried NZ Greenshell™ mussels
INGREDIENTS
- 1 dozen fresh live mussels
- ½ C flour
- 1 tsp lemon pepper
- 1 tbsp butter
- 2 tbsp olive oil
- Chopped parsley (garnish)
- 1 lemon (garnish)
METHOD
- Raw shuck the mussels using a blunt, flexible knife. Discard shells.
- Mix lemon pepper and flour together in a bowl
- Coat mussels in flour mixture
- Heat oil and butter in hot fry pan
- Fry mussels until golden brown (about 1-2 mins per side)
- Squeeze lemon to taste
