Pan fried NZ Greenshell™ mussels

INGREDIENTS

  • 1 dozen fresh live mussels
  • ½ C flour
  • 1 tsp lemon pepper
  • 1 tbsp butter
  • 2 tbsp olive oil
  • Chopped parsley (garnish)
  • 1 lemon (garnish)

METHOD

  1. Raw shuck the mussels using a blunt, flexible knife. Discard shells.
  2. Mix lemon pepper and flour together in a bowl
  3. Coat mussels in flour mixture
  4. Heat oil and butter in hot fry pan
  5. Fry mussels until golden brown (about 1-2 mins per side)
  6. Squeeze lemon to taste
