Steam open the mussels by placing a large pot on a high heat and adding the mussels, wine and garlic. Steam with the lid on for 5 min or until the mussels open. Take the mussel meat out of the shells and place into a bowl. Add the paprika, olive oil and sweet chilli sauce to the mussels. Mix until the mussels are evenly coated. Lay the bacon out on a chopping board and cut each piece in thirds. Place a mussel onto each piece and roll, securing with a toothpick. Cook in a frying pan or on the BBQ on medium heat for 2 min on each side. Garnish with parsley and serve.
